Samsung Camera moderator has officially confirmed the reason for disabling the bitrate 8K video option in Galaxy S23 Ultra. For your information, after the June firmware update high bitrate mode is no longer available. But, the option is still visible in the camera menu.

Now, the official Samsung Camera moderator (via Tarun Vats) has shared a reason. According to the moderator, Option was accidentally enabled in the second update, but it was disabled because it uses a lot of resources.
The South Korean tech giant might enable the high bitrate option for 8K videos on the Galaxy S23 Ultra with the upcoming One UI 6 beta update.
